My name is Tremina Lockett. I was born in
Chicago, Illinois. Zucchini bread is a very
important and delicious dessert in my family.
This serves as an important dish because my
family has been making it for several years all
the way back to my great grandparents. It is also
important because we have a family cookbook and
every generation passes down the cookbook so that
we can have all of the family recipes. We also make it
every Thanksgiving and Christmas.











Zucchini bread has been in my family for
generations. We began to make when my great
grandparents got tired of making the same thing
every holiday. They decided to try something different
and try a new recipe. They tried zucchini bread and it
turned out to be really good. Over time they continued
to make it and perfected the recipe to where they could
even put their own spin on it and teach it to their
children so that the recipe could be passed on.

The history of zucchini bread is unknown but is
rumored to have come from a line of European sweet
vegetable puddings that dates back to the Middle
Ages. Compared to carrot cake, it was considered an
alternative to a "healthier dessert" made from leftover
vegetables. It is said that it became popular in the
1960's because of it's great taste and ability to be
frozen and thawed. Zucchini bread also has a national
day; April 25.





The Recipe3 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs, beaten
1/3 cup water
2 cups grated zucchini
1 teaspoon lemon juice
1 cup chopped walnuts or pecans





Directions:
~ Preheat oven to 350 degrees F. In a large bowl,
combine flour, salt, nutmeg, baking soda, cinnamon and
sugar. In a separate bowl, combine oil, eggs, water,
zucchini and lemon juice. Mix wet ingredients into dry,
add nuts and fold in. Bake in a loaf pan, sprayed with
nonstick spray for 1 hour.
* An alternative is making zucchini bread muffins (Line
baking pan and divide into cups. Bake 30-40 mins.)

~ Reminisce about memories at past holidays
