Traditional Turkish Menemen
Menemen is a ver common breakfast dish in Türkiye. It's very simple to prepare. I hope you can enjoy!

First, cut the green peppers and take their seeds out and chop them. Then, pour the oil/ butter into a pan and heat. Then, add the peppers. If you prefer, add chopped onions and cook until they soften. After that, add the grated tomatoes and cook them well about 8 mins. Next, add spices and mix. If you wish, you can also add some cheese like feta, kashar or mixed of feta or ricotta like cheeses in this step. Crack the eggs directly into the pan. You can gently mix for a soft scramble or leave them runny, depending on preference. Finally, serve it hot. Traditionally, we serve it with bread and we enjoy it by dipping a piece of bread ınto MENEMEN.

Linsensuppe Rezept
Zutaten:
1 Glas rote Linsen
1 Zwiebel
1 Kartoffel
1 Karotte
1 Esslöffel Öl
1 Liter Wasser
Salz und Pfeffer
1 Teelöffel Paprikapulver
Zubereitung:
1. Die Zwiebel, Kartoffel und Karotte klein schneiden.
2. Öl in einen Topf geben und erhitzen.
3. Die Zwiebel anbraten.
4. Die Kartoffel, Karotte und Linsen hinzufügen.
5. Wasser hinzufügen und kochen.
6. Salz, Pfeffer und Paprikapulver hinzufügen.
7. Die Suppe pürieren

If you visit shops selling traditional products, you will surely have come across the puff pastry, the baked puff pastry of Pontian women.
Ready-baked puff pastry for pies, circular with a diameter of approximately 25cm. White, with brown spots (where they have been baked longer) and sporadic blisters on their surface. They require delicate transportation because they break into pieces.
These puff pastry sheets are the solution of Pontian women for making pies, without opening the puff pastry at that moment. They used to prepare them every September and keep them in their homes for an entire year. The dough has only flour, water and salt and dried very well with the masterful method of baking on the satsi (a metal surface supported on the fire pit, over coals).
The filling can be sweet or savory, the phyllo has a neutral flavor.
Ingredients:
For an individual twisted cheese pie 1 baked sheet a little grated feta cheese ,a few fresh mint leaves ,oil. Spray the sheet with water on both sides and let it soften. Spray again if necessary. Spread a little oil, the grated feta cheese and the herbs. Roll into a roll and then wrap into a snail. Bake in a non-stick pan, lightly oiled, on medium heat at first and then on low, for 20-30 minutes, making sure to turn it a few times. Do not put on high heat because it will get burnt.

Ingredients:
1 cup fine bulgur, 1 cup boiling water
2 tablespoons olive oil, 2 tablespoons tomato paste
1 tablespoon pomegranate molasses (optional, for extra flavor), Juice of 1 lemon
1 teaspoon salt (adjust to taste), 1 teaspoon ground red pepper (optional)
1/2 teaspoon cumin (optional), 1/4 teaspoon black pepper
1/2 cucumber, finely diced, 1 tomato, finely diced
1/4 cup fresh parsley, chopped, 1/4 cup fresh mint leaves, chopped
1/4 cup green onions, finely chopped, 1/4 cup olive oil for dressing
Instructions:
Prepare the Bulgur: Place the fine bulgur in a large mixing bowl. Pour the boiling water over it and cover the bowl with a lid or a clean kitchen towel. Let it sit for about 10-15 minutes to absorb the water and soften.
Season the Bulgur: After the bulgur has softened, fluff it with a fork. Add the olive oil, tomato paste, pomegranate molasses, lemon juice, salt, ground red pepper, cumin, and black pepper. Mix well to evenly combine all the flavors.
Add Fresh Ingredients: Add the cucumber, tomato, parsley, mint, and green onions to the bulgur mixture. Stir gently to combine.
Serve: Drizzle with olive oil before serving. You can also adjust seasoning if needed (extra lemon or salt).Serve chilled or at room temperature. Enjoy your delicious Turkish Kısır!
